Fiesta Taco Chili (a.k.a. Aunt Susie’s Most Awsome Taco Chili!)

1 onion, chopped

1 pound ground turkey

3 15 ounce cans of beans (3 different varieties: cannellini, kidney, black beans, etc.), drained

1 15 ounce can of corn, drained

1 15 ounce can of diced tomatoes

1 15 ounce can of tomato sauce

1 package of dry taco seasoning

1 package of dry ranch seasoning

1 1/2 cups water or chicken broth

Sauté chopped onion in olive oil in large oven proof pot, until onion is limp and transparent. Brown turkey in same pot. Drain excess oil. Mix in powdered Taco and Ranch seasoning packets.

Add all other ingredients, stirring to mix in evenly.

Simmer about one hour.

For your mixin’s bar (I put these ingredients out on the buffet counter in mid-sized matching serving bowls…):

Grated sharp cheddar cheese, chopped tomatoes, diced avocados, crushed Tostitos, sour cream, chopped scallions, salsa, chopped black olives, jalapeños, and anything else you might like to add in!

Serve chili, allow everyone to add their favorite toppings, and enjoy!
